Caponata

Caponata a typical dish from Sicily. Despite that many people think Italians just eat pizza, pasta and other heavy dishes, Italy has been a poor country historically and the easiest things to eat, thanks to the good weather, were always vegetables.

Caponata is based on aubergine, or egg plant, the real meat for veggie dishes. With this dish you will taste full Mediterranean cuisine and the added flavouring ingredients make it a perfect 1-dish meal with bread or plain rice, or as a side dish.

Hummus

Hummus a dip or spread made from chick peas. It is used most frequently alongside pita chips, vegetables, and bread, though it can be used in a variety of appetizers. In fact, hummus is the Arabic word for 'chick pea'. You may notice that many hummus recipes use garbanzo beans, not chickpeas. However, garbanzo is just the Spanish translation of 'chickpea'.

Hummus can vary greatly in flavour. Some types have a strong lemon flavor, some an overwhelming garlic flavor, and some hummus has a spicy tone.

This is undoubtedly one of the best recognised of Spanish recipes. No self-respecting tapas bar would be complete without tortilla de patatas in its repertoire. As versatile as it is delicious, this Spanish favourite can be eaten hot or cold, mixed with mushrooms, beans, spinach, or tomatoes.

Syrup Sausages

Sausages are a great source for protein and to have something 'chewy' as finger food on the platter is a firm favorite at dinner parties. Its especially great for introducing people to a vegan diet. The sesame seeds add a 'smoky' flavour to the sausages while the maple syrup and cayenne pepper (if you prefer a bit of a 'kick') is a great 'sweet-chili' combination.

Cayenne pepper is great for blood detoxification and stimulates the metabolism. The sesame seed oil is rich with manganese and copper which have been shown to have a cholesterol-lowering effect in humans, and to prevent high blood pressure and increase vitamin E supplies in animals. Sesame has also been found to protect the liver from oxidative damage.

Zucchini Trifolati

Zucchini are part of the same family of aubergines (also known as eggplant or brinjal) and so are very rich in water. 'Trifolati' means sliced and cooked in a fried pan.

This dish is really easy to prepare and good as a side dish or for breakfast.
